According to Jay Leno, you don’t get to say no to mobsters. Looking at that scenario from atop a moral high horse is just too much privilege for my tastes; from the ground, it looks like giving select employees the day off was a sound and rational decision.

Sound and rational, yes. Also extraordinarily disrespectful.
Giving your employees the option to take a (paid) day off instead of mandating it would have been an equally sound and rational decision. In the case cited, it also would have saved the business from a $200,000 fine, most likely.
We don't know the complete story, but there are always creative solutions to unexpected problems. If you are going to do business with the mob, then you better learn to get creative, and do it yesterday.

It doesn't change the fact that situations in which treating others with respect has been made impossible for you by circumstances are extraordinarily, astronomically rare, no matter how hard people will bend over backwards trying to convince you otherwise (also known as an "excuse").

Seems like a pretty open-shut case to me. He could have made a stand against racism, like any man with honor would have and told that racist mobster to get the hell out. Put him on the ban list, alongside other racists. Trump seems to like those Whitey Bulger types. And judging by the way he's running the country, that's effectively what he is. A racist mobster, a brute, a thug.
