For the Polytheist can this ascendency notable actually be built around?

Having 20% regen on a high str/health build seems like it could be insanely tanky (except for one-shots, of course).

No spell skills is insanely bad. Not just bad, but insanely bad. No auras, no banners, no heralds, no defensives, no berserk.. it's really, really bad.

Can it be done? Sure. It's almost certainly not worth it for 300hp and 8% regen. I have no idea why they couldn't just leave it at spells deal no damage, it seems like a flavour choice that should have been overridden for the sake of feasibility.
Yes, the Polytheist Ascendancy can definitely be built around for a high regen, high strength, and health-focused build. The 20% regen provides substantial sustain, making the character incredibly tanky in prolonged fights. However, as you mentioned, one-shots or high burst damage can still pose a threat. Focusing on scaling resistances, life leech, and defensive layers can further mitigate these risks.
